Smoked Mozzarella, Mushroom and Chipotle Pizza with Backroads Zinfandel

Ingredients:
1 recipe fresh pizza dough (homemade or store-bought)
1 Tbsp olive oil
¾ cup marinara or pizza sauce
1 Tbsp mashed canned chipotle pepper
1 cup shredded smoked mozzarella
1 cup shredded mozzarella
½ cup sliced mushrooms

Preheat oven to 450° F.

Roll out dough onto floured surface and transfer onto floured baking stone or lightly greased baking sheet.  Evenly drizzle or brush olive oil on surface of dough.  In a small bowl mix the marinara or pizza sauce with the mashed chipotle pepper, spread evenly over pizza dough. Evenly spread both mozzarella cheeses over sauce and top with mushrooms. Bake until crust is crisp and cheese is melted and beginning to golden, about 10-15 minutes.  Remove from oven and let rest for 5 minutes before slicing.

Makes 1 large pizza
